Cupcakes that are truly healthy and will leave you more than satisfied.

In the next few weeks and months, there will be several holidays that none of us can escape from. And some of the many things we look forward to are the holiday meals. Unfortunately, for many of us, the calories we’ll acquire is something we dread.

So how can we prevent ourselves in gaining so much weight this coming holiday season? Eating moderately is one way. Avoiding high calorie dishes and snacks is another. But how can you do that if you just love eating, especially if you are a cupcake lover?

Let me introduce to you healthy alternatives with these 5 healthy cupcakes you can prepare for your holidays.


Healthy Red Velvet Cupcakes

Ingredients

1/2 cup spelt or all-purpose flour (or Bob’s gf plus 1/4 tsp xanthan gum)(65g)

3 tbsp unsweetened cocoa powder (15g) (not Dutch)

1/4 tsp salt

1/4 tsp baking soda

1/2 cup xylitol or sugar of choice (90g)

handful mini chocolate chips, optional

1/4 cup mayo-style spread, such as Vegenaise (58g)

1 1/2 tsp pure vanilla extract

1/4 cup beet juice (60g)

2 tbsp water (30g)

1 tsp natural red food coloring, optional if you want them redder than the ones in the photos

 

Oatmeal Muffins

Ingredients

1 cup milk of choice (240g)

1 1/2 tbsp white or apple cider vinegar (21g)

2 tsp pure vanilla extract

1/2 cup applesauce (120g)

1 cup mashed banana, measured after mashing (240g)

3 tbsp vegetable or coconut oil (30g)

1 cup rolled oats (90g)

1 1/2 cup spelt flour (200g)

1/2 cup sugar of choice or xylitol (100g)

1 tsp baking powder

1/2 tsp salt

1/2 tsp cinnamon

1/2 cup mini chocolate chips, optional

 

Cookie Dough Stuffed Cupcakes

Ingredients

For the Cupcakes (adapted from my Gluten Free Cupcakes)

1 1/2 cups flour (white, spelt, or Bob’s gf) (180g)

1/2 tsp baking soda

1/2 tsp salt

1 cup xylitol or sugar of choice (180g)

only if using Bob’s gf, add 1/2 tsp xantham gum

1/2 cup mayonnaise (such as Vegenaise, Mindful Mayo, or homemade cashew mayo) (120g)

1 tsp pure vanilla extract

2/3 cup plus 2 tbsp water (190g)

For the Cookie Dough (adapted from my Chickpea Cookie Pie, and if a sugar-free version is preferred, you can use my Sugar-Free Cookie Dough Dip instead.)

1 can white beans or garbanzos (drained and rinsed) (250g total, once drained)

1/2 cup quick oats (40g)

2 tbsp unsweetened applesauce (30g)

1 1/2 tbsp oil (or peanut butter) (20g)

1 tsp pure vanilla extract

1/4 tsp baking soda

1/4 tsp salt

3/4 cup brown sugar or xylitol (135g)

1/2 cup chocolate chips (120g)

 

Peppermint Hot Chocolate Cupcakes

Ingredients

1 cup spelt or all-purpose flour

6 tbsp unsweetened (non-dutch) cocoa powder

1/2 tsp baking soda

1/2 tsp salt

1 cup granulated sugar of choice or xylitol

1/2 cup mayo-style spread, such as Vegenaise (or you can use this cupcake recipe)

1 tbsp pure vanilla extract

2/3 cup plus 2 tbsp water

just over 1/4 tsp pure peppermint extract

 

Healthy Hummingbird Cupcakes

Ingredients

Adapted from: Healthy Blueberry Muffins

1/2 cup crushed pineapple, drained (120g)

1/2 cup mashed banana (120g)

2 tbsp milk of choice (30g)

2 tsp pure vanilla extract

2 tsp white or apple cider vinegar

3 tbsp vegetable or coconut oil (30g)

1 cup spelt or all-purpose or Bob’s gf flour (135g)

only if using the gf flour, add 1/4 tsp xanthan gum

1/2 tsp plus 1/8 tsp salt

1/2 tsp baking soda

1/2 tsp baking powder

1/2 tsp cinnamon

1/3 cup xylitol or sugar of choice (65g)

pinch stevia or 1 extra tbsp sugar of choice

1/3 cup finely-chopped pecans, optional
