A scrumptious twist to the classic peanut butter and jelly sandwich.

One of the many things that complete our childhood is having peanut butter and jelly sandwich for a school snack or an afternoon snack when you have nothing else to take out of the fridge.

Even kids today get a taste of this simple yet yummy sandwich. So why not make a cupcake with the same idea. It will surely be an extra treat for the kids and the kids at heart as well. This awesome recipe from Martha Stewart will definitely do the trick. I love how moist the cupcake is and this is something I am crazy about. The flavors of the peanut butter, cream cheese and jam are just an explosion in your mouth.

Peanut Butter And Jelly Cupcake

c 1c

Ingredients:

1¾ cups               all purpose flour

¼ tsp                    baking soda

¾ tsp                    baking powder

½ tsp                    salt

¾ cup /136g         unsalted butter

1 cup                       sugar

⅔ cup                   creamy peanut butter (I used 100g)

3                             large eggs

½ tsp                    vanilla extract

½ cup                   sour cream

¾ cup                   coarsely chopped roasted salted peanuts

½ cup                    strawberry jelly or jam

Creamy Peanut Butter Frosting

6oz (170g)               Cream cheese @ room temperature

⅓ cup (40g)           Confectioner’s / icing sugar

1 cup (200g)           Creamy peanut butter

½ tsp                    Vanilla extract

½ cup                   Heavy cream (whipping type)
