A Delightful Angel Food Cupcake with Chocolate Whipped Coconut Frosting and Crispy Phyllo Nest
Cupcakes can come in any form, flavor, design and theme. We’ve tried making a variety of cupcakes based on different desserts, fruits, animals, occasion, cartoon characters and what not. And there are just so many to mention.
But I’m pretty sure you have not tried this yet. When I found this recipe, I couldn’t wait to get started. Not only this it taste fantastic but it looked really cute and adorable. It kinda reminds me of Easter but I think you can have this any time of the year. They can also be great presents.
The phyllo dough sheets cut into strips with the eggs on top are without doubt the best part of the entire design. It just looks so joyful!

Angel Food Cupcake Recipe
1/2 cup powdered sugar
2/3 cup cake flour, sifted
1/4 teaspoon salt
8 egg whites from large eggs, at room temperature
1/4 cup water
1/2 teaspoon vanilla extract
1/2 teaspoon coconut extract (or another 1/2 teaspoon vanilla extract)
1/4 teaspoon cream of tartar
1/2 cup granulated sugar
Chocolate Whipped Coconut Frosting
1 can full fat coconut milk, cold
4 tablespoons powdered sugar
4 tablespoons unsweetened cocoa powder
1 teaspoon vanilla extract
1/2 cup mini chocolate chips
1/3 cup toasted unsweetened coconut
mini Cadbury eggs, for decorations
pinch of salt
Crispy Phyllo Nest
25 phyllo dough sheets, defrosted
2 teaspoons butter melted (or cooking spray)
