Who says you have to stop eating cupcakes if you want to be healthy and fit. Being health and fit does not mean completely refraining from those you think will add up to the calorie count. It’s simply a matter of control and moderation. And at times, it also entails a little adjustment to what you put into your food.
Here is one cupcake recipe that will allow you to have that fit lifestyle you so strongly follow. You won’t have to be accused of cheating or breaking the rules of staying healthy. You won’t have to wait for your cheat days just to have a cupcake or two. And the best part is, it only take a minute or so to bake.

1 MINUTE FLOURLESS CHOCOLATE CUPCAKE (LC, GF)
Makes: 3 cupcakes
2 tbsp of unsweetened cocoa powder
1 tbsp of preferred sweetener ( you can use honey, but if you are not used to making anything low carb you might prefer to start with 2-3 tablespoons of your preferred sweetener .
1/4 tsp of baking soda
Mix together the egg, cocoa powder, and sweetener. Then add the baking soda. Pour the batter into microwavable silicone cupcake liners, or 3 small bowls or coffee mugs (to make it cupcake size). If you are using bowls or a coffee mug you should lightly grease the inside with butter, coconut oil, or your preferred cooking fat. Microwave all three cupcakes at once for 1 minute or until baked. Test the cupcakes for doneness by inserting a toothpick in the middle. If the toothpick comes out clean it is finished, if not microwave for a few more seconds.
