A simple recipe that takes only 3 ingredients, but makes some amazing cupcakes

I am always looking for simple recipes that take as little ingredients as possible, and not a lot of time to prepare (cooking time not included, or, how I like to call it – the Oven TV time :) ).

So, in my constant search for new cupcake recipes to add to my recipe book, I came across a marvelous recipe that as soon as I saw it, I knew I had to try it. One thing you should know about me is that I LOVE to munch of pistachio while I watch a TV show, or another episode of Grey’s Anatomy. So, when I found a recipe for pistachio cupcakes, it was a no-brainer – I had to try it.

Listen up, friends: these cupcakes have only three ingredients in them. THREE INGREDIENTS! If you’re a lifelong pistachio ice cream lover like myself, you will fully appreciate these soft, springy pistachio cupcakes topped with a whipped pudding frosting.

………………Since the frosting for these bad boys is simply a combination of pistachio pudding and whipped cream, it’s best you consume them right away (or the day of at least). They don’t keep well. But somehow I don’t think that will be a problem.

Also regarding the frosting….watch out. After a few swipes of my finger, I started just eating it by the spoonful as it tasted like the most light and heavenly pudding on earth. And when you top the cupcakes with salted crushed pistachios, you get that whole ridiculous sweet and salty combo.

Don’t mind if I do.

Pistachio Pudding Cupcakes

makes 12 cupcakes

based on Chocolate Pudding Dump Cake recipe

Ingredients:

1 box yellow cake mix (I used Betty Crocker)

1 3.4 oz package instant pistachio pudding mix

1 1/2 cups cold milk

for frosting—

1 cup cold milk

1 3.4 oz package instant pistachio pudding mix

1 cup heavy cream

1/4 cup powdered sugar

roughly chopped roasted/salted pistachio nuts
